Xen linux is stable. It is used by Fortune 500 Companies via RHEL 5. Customers have reported issues with Xen Windows, but we have been running it without any problem here, and general opinion is positive.

For Xen, please only use LVMs. Do not use file based storage. In the latter case, if the main node crashes, you will lose data, especially if you start the vps outside of hyperVM. For new installs, hyperVm will not allow file based storage at all.

File based storage is when the Xen image is created as a sparse file in /home/xen/vps.vm/root.img . The right way to do this is in an LVM as /dev/VolGroup00/vps__rootimg.
To find out if you are using LVM or not, go to vps home and check the 'location' on the information list, and it should be lvm:lvmname and NOT /home/xen or some path.

Xen is Stable, we have been running it in production for about 2 months now after doing a lot of testing. There has certainly been a lot of major improvements in stability recently.
The only real gripe for me is that enabling more than 1 VCPU (Virtual CPU) seems to cause issues with numerous kernels. It seems to be a bug that is being overlooked, although it is documented in the Xen Bugzilla.
Symtoms of the issue include errors inside a VM, a VM causing the node to crash, or the whole node rebooting constantly due to a Kernel Panic with sync errors.
It doesn't seem to be related to a particular machine, we have noticed the issue on our hardware down at the DC as well as our testing boxes.
